Dum biryani

HAIDRABADY KACHCHY GOSHT KI BIRYANI…

Ingredients:-1 Kg chicken

1/2Kg yogurt

Biryani Masala

2 large onions Sliced

1 tablespoon Ginger garlic paste

A handful of mint leaves

2 tablespoons of chopped green chilies

1/2kg rice

2 Tomatoes chopped (medium)

Recipe:-
Wash the chicken and dry it.
In the bowl, Take yoghurt, home-made biryani masala, ginger garlic paste, tomato slices, green chilies, chopped mint, salt.

Fry the onion into 150 g-250g of oil until the onions are a beautiful golden brown colour. You need to reserve the oil for the cooking of the Biriyani.
Add half of the oil along with the golden brown onions into the chicken yoghurt mixture. Reserve the rest half oil for rice layering.

30 minutes before you want to cook the Biriyani, soak your rice.

In a wide open pan boil the water, make sure to half cook your rice. Strain them.

Heat a cast iron pan over high heat. Place a saucepan ( Which has a lid) Over the cast iron pan. Add your raw chicken marinate into the saucepan. Add your strain the rise over the top of the chicken marinate. Garnish some sliced ginger, fried onions, chopped coriander/ mint and chopped green chilies.
add the reserved oil of the onions to the saucepan as well.

Cook on high flame until you see the vapours on the lid condensing back into the saucepan.
It will take about less than or equal to 10 minutes.

Once you see the waivers condensing back lower your claim down to its lowest settings. Cook for another 30 to 40 minutes. You can check the doneness of your biryani by inserting a clean dried spatula at the bottom of your saucepan , And if it comes out clean without any water on it, your dum is done. Biriyani is ready to serve.
